In the meantime, here is one of my favorite recipes. It makes a quick and easy dinner to die for. And who doesn’t love a quick and easy dinner?
Ray’s Shrimp Scampi
Ingredients
One pound of shrimp
2 tablespoons olive oil
2 tablespoons butter
1 1/2 tablespoon minced garlic
1 teaspoon salt
quarter teaspoon black pepper
1/3 cup chopped fresh parsley
Quarter cup lemon juice
1/8 teaspoon red pepper flakes
1/4 cup grated Parmesan
8 ounces of Angel Hair Pasta
Directions
Melt butter and olive oil on medium heat, add garlic and saute one minute.
Add the shrimp and sprinkle with salt and pepper. Saute five minutes, or until pink, flipping over halfway through. Sprinkle with salt and pepper.
While shrimp is cooking boil Angel Hair pasta according to package directions. Once cook, drain noodles and put in a mixing bowl, pour shrimp over the top, add lemon juice, parsley and pepper flakes. Toss. Top with cheese and serve.
